This Cheesy Gochujang Garlic Bread is a fusion side dish that combines everything you love about regular garlic bread with spicy gochujang paste for a Korean-inspired spin! All you need is 8 ingredients and a few minutes to make.

Ingredients You’ll Need
- Garlic: For this garlic bread recipe, you’ll need a full head of garlic (about 10-12 garlic cloves).
- Oil: A small drizzle of oil on the head of garlic helps to roast the garlic and aids in the caramelization process. We used olive oil, but any cooking oil with a higher smoke point will work.
- French bread: Just like our classic garlic bread recipe, you’ll need a full loaf of fresh, bread. We opted for a loaf of French bread, but a long loaf of sourdough would be great, too.
- Vegan butter: Softened vegan butter is the main ingredient in the garlicky, gochujang spread and any dairy-free butter can be used in.
- Gochujang: This fermented Korean chili paste adds a unique, spicy flavor to the garlic bread and puts a fun Korean spin on the regular garlic bread we know and love. We use 1-2 tablespoons of gochujang paste, but depending on your spice preference, feel free to adjust this measurement!
- Vegan cheese: We use both vegan parmesan cheese and mozzarella cheese shreds in this recipe for the best cheesy flavor. Feel free to opt for either homemade or store-bought cheeses. - Chives: Fresh chives are optional, but add the perfect fresh finishing touch!

How to Make Gochujang Garlic Bread
- Roast the garlic. Cut the top off of a head of garlic and place it into a sheet of foil. Drizzle with olive oil, then wrap it up. Place it in the preheated oven, directly on the rack, and roast for 45 minutes. Remove and set aside to cool.
- Squeeze out the roasted garlic. Once roasted, allow the head of garlic to cool until it’s easy enough to handle. Then, unwrap and squeeze the roasted garlic cloves into a medium bowl.
- Make the gochujang garlic butter. Add the softened butter, gochujang paste, and vegan parmesan cheese into the bowl with the roasted garlic cloves. Use a fork to mash the mixture together until smooth and well combined.
- Spread the butter mixture over each half. Using a serrated knife, cut the loaf of French bread in half lengthwise and spread the butter mixture evenly over each half. Transfer the bread to a baking sheet and top each half with vegan mozzarella cheese.
- Bake. Bake the garlic bread for 10-12 minutes or until the cheese is melted.
- Serve. Top with chopped chives and cut the gochujang garlic bread into individual slices and serve as desired. Enjoy!

Recipe FAQs
It’s true that vegan cheese does not melt in the same way as dairy cheese, but store-bought vegan cheese has come a long way, and most brands melt very well now. With that being said, there are a few tricks you can use to make your vegan cheese as melted as possible.
First, make sure to cook the garlic bread at 400 degrees Fahrenheit. Any lower, and it won’t be hot enough to properly melt the cheese. If this hot temperature doesn’t melt the cheese to your liking, broil the bread for the last couple of minutes. This will help encourage the cheese to melt even faster and make it as melty as possible.
Although replacing fresh garlic with garlic powder will work in many of our recipes, fresh roasted garlic cloves are highly recommended in this garlic bread. Without it, the roasted, garlicky flavor will be lacking depth of flavor and simply won’t be the same!
Gochujang paste is somewhat of a specialty ingredient and may not be available in every grocery store. If your local grocery store carries it, it will most likely be stocked in the international section of the store, or near the other chili pastes and hot sauces. If you can’t find it, check your local Asian grocery store or purchase it online. Most brands are typically naturally vegan but do often contain gluten.
Storage Instructions
Fresh gochujang garlic bread is best when served while warm and cheesy but can be stored in an airtight container at room temperature for 1-2 days. Leftovers will reheat best in an air fryer, toaster oven, or wrapped in foil in the regular oven. Heat until warmed through and crispy again.

- 1–2 tablespoons gochujang
- 2 tablespoons vegan parmesan cheese, optional
