This vegan filipino garlic fried rice is easy to make, requires just 3-ingredients and is the perfect way to bring your day-old rice back to life.
If you’ve never had Filipino Garlic Fried rice, you’re in for a treat! It is traditionally served alongside most filipino breakfast dishes and it basically the epitome of my childhood.
I don’t know how I haven’t gotten this on the blog sooner, it is soooo easy to make and one of my favorite dishes! After we shared our Filipino Chicken Adobo recipe on the blog last Fall , I got a plethora of requests to do more vegan Filipino dishes so here we are, back with another one! I am working on a few more in the test kitchen and I am hopeful that they will be released within the next few months!
It is important to NOT use fresh rice in this recipe as it will be too moist and you will end up with mushy not-so-fried rice. We recommend that the rice you use is at least a day old so that it has time to sit and dry out a bit.
For this recipe we used avocado oil as it is a high heat oil and great for pan-fried recipes. This recipe is also a part of our brand new meal prep video on youtube! In the video, we show you how to meal prep 4 dishes for the week for breakfast, lunch, diner and dessert/snack. We worked hard on it and are so happy with the result, so we hope you like it!
Garlic fried rice us usually paired with filipino breakfast meats and/or eggs, so in order to make it vegan, here is what we recommend:

This vegan filipino garlic fried rice is easy to make, requires just 3-ingredients and is the perfect way to bring your day-old rice back to life.
Ingredients
2 tablespoons cooking oil of choice (we used avocado oil)
10 cloves garlic, finely minced
4 cups day-old cooked long grain jasmine brown rice, cooled and dry* (see notes)
Salt and black pepper, to taste
1 scallion, thinly sliced (optional, for garnish)
Instructions
In a medium pan over medium-low heat, add 2 tablespoons of cooking oil. Once heated, add in the garlic and pan fry until it is golden brown, stirring regularly. This should take about 2 minutes or less.
Remove 1/4 of the garlic from the pan, leaving the oil behind, and transfer it to a small bowl. Set aside.
Bring the heat up to medium and add in the rice. Mix to coat the rice evenly in the oil and garlic and fry the rice until it is warmed through, about 3 minutes. Season with salt and pepper to taste.
Serve warm. Garnish the rice with some of the reserved fried garlic along with chopped scallions. Enjoy!
Notes

1 1/3 cups of uncooked rice will yield 4 cups of cooked rice.
We prefer long grain Jasmine brown rice but short grain will work, as well as any type of white rice. We have not tested this recipe with black rice but we assume it will be a bit firm as that rice usually is a bit more firm.
