This recipe is a part of our Sweet Potato Breakfast Series! We’ve created 5 sweet potato-centric meals you can enjoy in the morning, or whenever you please. First up are our Sweet & Savory Sweet Potato Boats.
If you’ve been following us for even a short period of time, you know we both eat a bit differently. Jasmine prefers very sweet and simple meals, and I prefer things more on the savory and salty side. For this recipe, we thought it would be fun to bring both of our worlds together, and share a sweet version and a savory version so that there is a little something for everyone. For Jasmine, we chose ingredients she normally adds into her breakfast smoothie bowls and oatmeal. The combination of granola, sliced banana, nut butter and superfood toppings was a hit with her! And we also created a savory Mexican inspired version for myself. I am a burrito lover, so I decided to take familiar ingredients and flavors, and bring them into this stuffed potato. It has a mix of beans, green, pico de gallo, avocado, cream cheese in place of sour cream and everything bagel seasoning because we have been hooked on it!

I used to eat the sweet-style boat ALL the time for breakfast, and I already miss it! My sweet potato was probably over two pounds though, hahaha! Kept me full for hours, and I could customize the toppings all the time!

A big ole stuffed potato is just pure comfort food ๐
Yes I agree!
Well, they both look incredible, but I am a savory breakfast fan, so I would likely reach for the Mexican version first.
I’m on the savory train on this one (never much liked sweet potatoes sweet)! These look delicious and what a power house way to start the day!
That is exactly the same as Chris, and he loved these!
