This recipe was inspired by one of my best friends who recently went vegan. She had never and still doesn’t often cook for herself, but after going vegan and being more independent in regards to her diet, she decided that eating out was getting 1. too expensive 2. too unhealthy. She was fearful of the oven, and at first only chose to rely on a microwave, but slowly but surely she began to confidently attempt cooking on her stove.

I have been helping her slowly get more comfortable in the kitchen, and I suggested she try making granola. Baking granola in the oven for her was daunting, although simple in regards of recipes, so I decided to make it a bit more easy and approachable so that she could make it with confidence at home.

Consider the ingredients of this recipe a base, so feel free to have fun with this and add your own special twist! You could add things like chocolate chips, vegan marshmallows, various nuts and seeds, swap raisins for cranberries, seriously anything you want or have to use up in your pantry.

We served ours with some almond milk and frozen blueberries, and we also love layering it into vegan yogurt parfaits!

Description

This easy stovetop granola requires just 1 pan + 6 simple ingredients — that’s it! Perfect if you are without an oven or are just too lazy to use one! 😉

Ingredients

  • 1 cup gluten-free rolled oats
  • 1/4 cup nuts of choice, roughly chopped (I used almonds)
  • 1/4 cup raisins or dried fruit of choice
  • 23 tablespoons maple syrup
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon cinnamon

Optional:

Serve with:

  • Almond milk
  • Fresh or frozen fruit

Instructions

  1. In a wide pan, toast the oats over medium heat, for about 3 minutes, stirring often.
  2. Add in the almonds and toast for another 3-4 minutes, stirring often, until the oats are fragrant and lightly browned.
  3. Add the remaining ingredients except for the maple syrup and mix until uniform, then drizzle the syrup over top. Lower heat to low and mix the syrup through for 3-4 minutes or until dried out.
  4. Remove from heat and cool, then serve or transfer into an airtight container for about 2 weeks.

Notes

  • *Watch the almonds closely, and be careful not to burn them!

  1. We discovered this recipe when we’re doing a kitchen reno and didn’t have an oven. Now it’s the only granola recipe I make. I triple or quadruple the recipe and my husband eats it for breakfast every single day. I also like that it has way less sweetener and no oil compared to other granola recipes. So much easier than baking granola!

  2. I’ve never made granola on the stovetop, but it looks pretty easy actually! I will definitely try it out!

  3. I’ve made this twice in 3 days and I’m thinking about how excited I am to make it again, so I guess you could say it’s becoming a staple around my house. Thanks, Jasmine!

  6. This looks so good! I always get so impatient while waiting for granola that’s cooked in the oven. I’m excited to give this a try!

  7. I will definitely try this!! It looks good and homemade granola is better than store bought granola!! Thank you ❤

  8. I am soooo excited to make this for my brother. He loves cereal so much and that is kind of what is holding him back from becoming vegan.

    1. There are many vegan cereals available at the store as well, even some that are “accidentally vegan” if he would be interested in that. Peta has a lot of that on their website <3

  9. Yes! I love all your recipes. So simple yet conscious ?
