Classic Vegan Brownies

There’s nothing that beats a rich and chocolatey fudge brownie, especially when it’s homemade AND vegan!

If you follow me on Instagram, you’ll know just how special these brownies are. I have been working to perfect them for the last two months and I am SO excited for you to try the final product. I wanted to put together a brownie that was a mix of both fudgey AND cakey and I finally did just that. These brownies are dense but still have some bite and fluff! A sprinkle of maldon salt on top is highly recommended, it finishes these off nicely!

A few months ago, I had the chance to visit the Florida Crystals sugarcane farm near West Palm Beach, FL to learn more about their company and farming practices while touring the farm where all of the magic happens.

First off, I’m grateful that SSV gave me the opportunity to do so because I learned so much. The detail that is put into the farming practices is to a degree that I would not have ever imagined! Not only is farming done on site, but they also continuously conduct agricultural research and data analyses in order to find the most eco-friendly and efficient ways to grow their sugar cane.

Florida Crystals is actually the only source for organic cane sugar grown AND harvested in the USA. All of the sugar cane starts in a controlled lab, are transferred to a (giant) greenhouse, and eventually are planted in the ground on the fields. Once the plant matures, it is cut and harvested, but the roots can actually stay in the ground and grow additional plants for almost 3 years.

Fun fact: the Florida Crystals farming process is essentially zero waste. Each stalk of sugarcane produces:

  • Solid fuel called bagasse which produces electricity for the facility and can light up to 53,000 homes! It is also used to make compostable containers that compost in 71 days– how cool is that?!
  • Water which is reheated and reused on site the they need little to no water from outside sources.
  • Sugar and molasses, of course.

So wait, not all sugar is vegan?

That’s exactly what I said when I first went vegan– I was so confused! I wondered how sugar, which comes from a plant, can contain animal ingredients? It all comes down the the processing of the sugar– when worrying about whether sugar is vegan or not, refined sugar is what you need to focus on, which includes white, brown, and powdered sugar.

Refined sugar can come from two sources, sugarcane and beets. Beet sugar is always vegan so you don’t need to worry about that one.

When it comes to cane sugar is when it gets a bit confusing. After sugar is farmed from a sugarcane plant, the juice is sometimes processed and filtered through bone char which essentially bleaches it and gives it the classic white color of basic sugar. So the sugar does not technically contain animal products but its processed through an animal byproduct and therefore not technically vegan.

Not all refined sugars are processed through bone char, though, but sometimes it’s just hard to tell when it does not specify on the bag. When looking for vegan sugar, just make sure to buy sugar that is labeled beet sugar OR organic, natural, raw, or unrefined. This sugar will not have that pure white color as mentioned above, but it will work just the same and is perfect for all of the recipes you’ll need it for, including these brownies! 😉

ALL Florida Crystals sugar is vegan by default. To confirm, you can also check the bags of their sugar– all of them have the vegan certification symbol 🙂

Classic Vegan Brownies (9-Ingredients)

Looking for the PERFECT classic vegan brownie recipe? Then this recipe right here is for you! These vegan brownies are sweetened to perfection, a mix of both cake-y AND fudge-y, plus SO easy to make. They require simple ingredients and will be ready in less than an hour– so let’s get cookin’!


Ingredients

  • 1 stick (1/2 cup) vegan butter
  • 1 1/3 cup (300g) Florida Crystals organic cane sugar
  • 2 teaspoons (8g) vanilla extract
  • 3 tablespoons (49g) unsweetened applesauce
  • 1 1/2 cups (188g) unbleached all-purpose flour
  • 1/2 cup + 2 tablespoons (60g) Dutch process cocoa powder
  • 1 1/2 teaspoons (6g) baking powder
  • 1 teaspoon (7g) salt
  • 1 oz. good quality semisweet or bittersweet chocolate (60-70% cacao), finely chopped
  • Optional: Flaky sea salt, for sprinkling at the end

Instructions

  1. Preheat the oven to 325°F and line a 9×9-inch aluminum pan with parchment paper. Set aside.
  2. In a small pot over low heat, add in the vegan butter. Allow it to melt completely.
  3. In the meantime, add the granulated sugar to a large bowl. Once the butter has melted, pour it over the sugar, being sure to get as much as you can out of the pot with a spatula. Mix together until uniform. Mix in the vanilla extract and applesauce then set aside. 
  4. In another large bowl, add in the remaining ingredients and mix until everything is uniform. 
  5. Add the wet ingredients into the dry ingredients and mix until combined. Work everything through until it becomes nice and uniform. It will be similar to a cookie dough.
  6. Transfer the brownie batter to the lined baking dish and spread it out evenly. It will seem like it is very thick/too dry but don’t worry, this is how its supposed to be! Place the pan into the oven and bake for 25-30 minutes (see notes).
  7. Cool the brownies completely before slicing. Serve with an optional sprinkle of flaky salt. Enjoy!

Notes

  • The brownies are done when a toothpick comes out with only a few moist crumbs still clinging to it. It’s okay for the toothpick to look moist, but if you see very wet batter, keep baking. We have found through our testing that these always finish between 25 to 30 minutes.
