Vegan Eggfruit Ice Cream {oil + refined sugar-free} #eggfruit #icecream #exotic #vegan #oilfree #glutenfree #coconut #icecream #veganicecream #miamifruit
Why haven’t I added freeze dried fruit to ice cream a long time ago?! Freeze dried fruit is a great addition to ice cream mixes as they do not contribute any additional water content + add in a concentrated fruit flavor. This allows you to keep your ice cream creamy and dreamy while also at maximum flavor.

Today I decided to experiment with eggfruit (also known as canistel) and I can 100% say that you should get your hands on some and try this out for yourself because it was delicious– not too sweet, dreamy and creamy + the perfect punch of flavor.Vegan Eggfruit Ice Cream {oil + refined sugar-free} #eggfruit #icecream #exotic #vegan #oilfree #glutenfree #coconut #icecream #veganicecream #miamifruitI tried out the freeze dried eggfruit crumbles from Miami Fruit, an amazing exotic fruit distributor in Florida all sourced from their local farms. If you are in Miami or plan to visit, I would definitely recommend you check them out + grab some fresh and freeze dried exotic fruits! I have been dreaming about trying their Florida grown mamey sapote ?

I know the name ‘eggfruit’ may be a bit daunting, and I know I felt the same way too when I first heard of it but I really enjoyed the flavor, and loved how it could be used in both sweet and savory dishes. The texture of the fresh fruit apparently resembles that of an egg yolk, and it tastes a bit eggy in flavor but also slightly sweet.Vegan Eggfruit Ice Cream {oil + refined sugar-free} #eggfruit #icecream #exotic #vegan #oilfree #glutenfree #coconut #icecream #veganicecream #miamifruitThe idea of creating an ice cream with the eggfruit stemmed from the fact that a lot of non vegan ice creams are made with raw eggs. I figured I could still capture a similar flavor while also leaving out the cholesterol and saturated fat that came along with it.

  • Author: Jasmine @ Sweet Simple Vegan
  • Total Time: 12 hours 15 minutes
  • Yield: 3

  • 4 large ripe bananas, sliced and frozen overnight
  • 1/2 cup coconut cream (from can of full fat coconut milk)
  • 1/3 cup Miami Fruit freeze dried eggfruit crumbles
  • 2 tablespoons almond butter
  • 1 tablespoon coconut nectar
  • 1 teaspoons pure vanilla extract
  • Pinch sea salt

Bread pan or small baking dish

Toppings of choice, such as:

  • Vegan chocolate sauce
  • Coconut flakes
  • Nut butter
  • Fresh fruit
  • Cacao nibs

  1. Slice bananas and place in an airtight container in the freezer overnight, along with the bread pan or small baking dish you are using. Once you are ready to prepare the ice cream, remove the bananas from the freezer and allow it to sit for 5 minutes on the counter to soften for blending.
  2. In a food processor, add your freeze dried egg fruit and run until fine.
  3. Open up the can of coconut milk, taking care not to shake it, and carefully scoop out the coconut cream solids into the food processor, and save the remaining liquid for another use (smoothies, oatmeal, etc). Add in the remaining ingredients (except the toppings) and run until smooth and creamy.
  4. Remove your cooled bread pan or baking dish from the freezer and pour in the ice cream. Pop back in the freezer for 3-4 hours. If you are freezing overnight, just be sure to allow the ice cream to sit out for a few minutes to make it easier to scoop.
  5. To serve, add a few scoops into a bowl and add toppings of choice and enjoy!

  1. Eggfruit?! What on Earth, I’ve never heard of it! The ice cream looks absolutely incredible. Now I’m kind of swayed to give eggfruit a shot!

  2. Wow! I’ve never heard to eggfruit. Sounds intriguing. And this ice cream looks great! Thanks for the great recipe.

  3. Hi guys,
I love how you add so much knowledge in along with such a creative recipe. I’ve never thought of using freeze dried fruit to flavor, but now I definitely want to try it. I think it’s great that you veganized a typical way of flavoring ice cream. Your recipes never fail to impress, by appearance and taste both.
Thanks for the recipe! I will certainly buy the freeze dried fruit through the link because I like that you mentioned that straight up. You two rock!
