Why haven’t I added freeze dried fruit to ice cream a long time ago?! Freeze dried fruit is a great addition to ice cream mixes as they do not contribute any additional water content + add in a concentrated fruit flavor. This allows you to keep your ice cream creamy and dreamy while also at maximum flavor.
Today I decided to experiment with eggfruit (also known as canistel) and I can 100% say that you should get your hands on some and try this out for yourself because it was delicious– not too sweet, dreamy and creamy + the perfect punch of flavor.I tried out the freeze dried eggfruit crumbles from Miami Fruit, an amazing exotic fruit distributor in Florida all sourced from their local farms. If you are in Miami or plan to visit, I would definitely recommend you check them out + grab some fresh and freeze dried exotic fruits! I have been dreaming about trying their Florida grown mamey sapote ?
I know the name ‘eggfruit’ may be a bit daunting, and I know I felt the same way too when I first heard of it but I really enjoyed the flavor, and loved how it could be used in both sweet and savory dishes. The texture of the fresh fruit apparently resembles that of an egg yolk, and it tastes a bit eggy in flavor but also slightly sweet.The idea of creating an ice cream with the eggfruit stemmed from the fact that a lot of non vegan ice creams are made with raw eggs. I figured I could still capture a similar flavor while also leaving out the cholesterol and saturated fat that came along with it.
