I don’t know about you, but for me, one of the things that always got in the way of eating healthfully is time. After a long work or school day, the last thing I ever wanted to do was cook — and instead, I was one to just grab what was easiest from either our freezer or a local restaurant. We made this rice cooker meal to help with that!

An easy vegan rice cooker meal that you can have ready in just 35 minutes! This Vegan Spanish Inspired Rice and Beans is hearty, flavorful and is guaranteed to hit the spot.
Ingredients
2 cups uncooked Jasmine brown rice, thoroughly rinsed
2 cups vegetable broth
1 (16 oz.) can diced tomatoes
1 (15.5 oz.) can pinto beans, drained and rinsed
1/2 cup red bell pepper, diced
1/2 cup red onions, minced
1 rib celery, chopped (about 1/3 cup)
1/4 cup fresh cilantro, chopped
2 cloves garlic, minced
1 tablespoon chili powder
1 tablespoon cumin
1/2 teaspoon dried oregano
Salt and pepper, to taste
Garnish with (optional):
Fresh lime, sliced into wedges
Cilantro, roughly chopped
Instructions
Add all of the ingredients into your rice cooker pot and mix thoroughly until uniform. Cover and set it to cook on the “brown rice” setting (about 25-30 minutes).
Remove lid and allow the rice to cool for 5 minutes, then season with salt and pepper to taste.
Serve with a wedge of lime and a sprinkle of fresh cilantro.
Notes
Stovetop option: Add all of the ingredients (except for the salt and pepper) into a large pot, mix thoroughly and bring to a boil. Lower to a simmer and cover. Cook until the rice has absorbed all of the liquid, about 25-30 minutes. Remove from heat and allow it to cool for 5 minutes, then season with salt and pepper to taste. Serve with a wedge of lime and a sprinkle of fresh cilantro.
I have never made rice right. Burnt it or it wasn’t ready yet…. I cook it stovetop.

Yes! You could 🙂 You would just prepare it as you would prepare rice in a pot! Bring everything to a boil, cover pot with a tight-fitting lid and reduce heat to low. Cook, without uncovering pot for 18-20 minutes or until cooked through. Remove pan from heat and allow it to sit for 10 minutes. Remove the lid and fluff up the cooked rice mixture with a fork. Enjoy! 🙂
Having 4 young kids at home, I LOVE simple one-pot healthy meals like this one! The fam liked it so much they were asking to have it again tomorrow! It was fast to throw together, so its a great busy weeknight go-to meal to have on hand that uses ingredients you most likely already have. I will make this again, thanks for sharing!
I made this for the first (but not the last) time, for my family. My family are being dragged into veganism against their will, and it’s tough to find stuff they will all appreciate. I found a recipe for stuffed peppers that I make for them often, and this is basically a stovetop version of that. Therefore it was a big success! No turning on the oven!
