If you’re looking for a quick and delicious dessert recipe, these easy peanut butter squares are a winner. Not only is peanut butter and chocolate the ultimate combination, but these bars are ready in just 30 minutes and cost less than $5 to make.

This recipe is from Sam Turnbull’s new Cookbook Fast Easy Cheap Vegan. These magic little bars taste like peanut butter cups but better because they are way less fussy to make. You can use crunchy or smooth peanut butter for this recipe, but Sam prefers crunchy because of the awesome texture it gives these treats.


Here’s What You Need to Make These Easy Peanut Butter Bars:
- Powdered Sugar – If you don’t have powdered sugar, you can make your own by processing granulated sugar in a high-speed blender with some corn starch. Check out this recipe here.
- Graham Crackers – It is sometimes hard to find vegan graham crackers because most contain honey, but believe it or not, the original red Nabisco boxes are accidentally vegan. If you can’t find those, however, you can use any cookie crumbs of your choice to make this recipe.
- Peanut Butter – You can use either chunky or smooth peanut butter for this recipe, but Sam recommends crunchy because it helps give the bars the perfect texture. Also, if you’re allergic to peanut butter, don’t have it on hand, or simply don’t prefer it, you can use any nut butter of your choice to make this recipe.
- Dark Chocolate – You can use dark chocolate in any form for this recipe, whether it’s chips, chunks, or a broken-up chocolate bar. Darker chocolate of 80% or more is recommended when making these easy peanut butter bars because it helps balance out the sweetness.

Easy Peanut Butter Squares
- Total Time: 30 minutes
- Yield: 10 2-inch squares 1x
Description
These magic little bars taste like peanut butter cups but better because they are way less fussy to make. You can use crunchy or smooth peanut butter for this recipe, but Sam prefers crunchy because of the awesome texture it gives these treats.
Ingredients
- 1 cup powdered sugar
- 6 tablespoons vegan graham cracker crumbs or other vegan cookie crumbs (gluten-free if preferred)
- 1/2 cup chunky or smooth natural peanut butter or other nut or seed butter
- 1/4 cup vegan butter, melted
- 4 oz (2/3 cup) dark vegan chocolate or vegan chocolate chips, melted.
Instructions
- Line an 8 x 4” loaf pan (or similar sized dish) with parchment paper.
- In a medium bowl, mix together the powdered sugar, cookie crumbs, peanut butter, and vegan butter to make a thick dough. Dump the dough into the prepared pan and firmly press down to cover the bottom.
- Melt the chocolate And a microwave-safe bowl in 20-second increments, stopping to stir as needed. Remove it from the microwave just before it is completely melted (they will be tiny pieces left) and start to finish the melting. (This will ensure you don’t burn the chocolate.) Pour the melted chocolate over the dough base layer and spread it evenly.
- Chill in the freezer for 15-20 minutes, until the chocolate is set. One sec, remove the pan and cut into 1-inch squares. You can cut the squares with the frozen, but they’re easiest to cut when they were at room temperature, so the chocolate doesn’t shatter.
Notes
Quick Tip: These squares are very sweet, so using 70% or higher dark chocolate is recommended to balance the flavors.
Make-Ahead: Prepared bars can be stored in an airtight container in the fridge for up to 1 week or in the freezer for up to 3 months.
