Chris and I are coming at you with a recipe this week that hits home for us. Cinnamon sugar toast was something we both had on repeat as kids before school, and we decided that with back to school season in full effect, it was the perfect time to share this. I love when we both discover food favorites that we enjoyed at similar times in our lives across the country, it’s so cool to hear about!We decided to play off of our childhood memories and make a homemade vegan cinnamon butter for you to enjoy and share with your kids (…if you have kids, of course 🙂 ). The base of this spread is the Pure Blends plant-based butter that we found at our local Walmart. It works perfectly in this recipe as it is super creamy and fluffy.
All you have to do is whisk it in a resealable in container with cinnamon, vanilla, maple syrup, a little bit of salt and cardamom, if you have it. Pop the lid on the container and place it into the refrigerator until you are ready to use it.
We love to serve ours on toast, but there are also so many other ways to serve it!
On pancakes or waffles
In mashed sweet potatoes
Paired with baked apples or fall fruit
Brushed on pineapple rings that are then grilled and caramelized to perfection

It is so amazing to see the shift in products that have occurred at a store we have shopped at our entire lives. There are a ton of vegan options available and spotting this butter made us so excited. Walmart has both the Pure Blends avocado oil and coconut oil based butter; both are delicious and you can use either for this recipe! Also, I found out that Walmart now also has a grocery pickup option?! We actually placed our order ahead and it was ready for us when we arrived. So crazy! We served the cinnamon butter on our breakfast fig toast and man was it good– cinnamon butter, fresh figs, fresh sourdough bread, pistachios, mint and a sprinkle of salt for good measure. Figs are in season and we have been finding amazing ones up here in Washington. If you haven’t had fresh figs, I highly suggest you do ASAP, or at least before the season is over!

An easy and perfectly sweetened cinnamon butter that is ready in 5 minutes or less! This recipe is perfect on breakfast toast but is also great in mashed sweet potatoes, roasted fall fruit and even on waffles and pancakes. It is perfect for kids, too!
Ingredients
Cinnamon Butter
1/4 cup Pure Blends plant-based butter (both avocado oil or coconut oil work)
1/4 teaspoon vanilla extract
1/2 teaspoon cinnamon
2 tablespoons maple syrup
1/16 teaspoon cardamom (optional)
Breakfast Fig Toast
8 slices sourdough bread
8–10 fresh figs, sliced into rounds*
Roasted pistachios, crushed
Flaky sea salt
Fresh mint, finely cut
Instructions
In a sealable container, whisk together all of the ingredients for the cinnamon butter. Taste and adjust seasonings as desired. Pop the lid on and place into the refrigerator you are ready to use it.
For the fig toast: Toast the bread until it is as golden as you would like it. Spread about 1/2 tablespoon of the cinnamon butter onto each slice of toast. Top with sliced figs, pistachios, mint, and salt as desired. Dig in!
Notes
Ensure that your figs are ripe for the best flavor. You will know when they are nice and squishy, and sometimes oozing with sap from the bottom.

Apparently figs have dead wasps in them as they need to be pollenated by a female wasp and sometimes they get trapped inside – the dead wasp gets broken down by proteins in the fig, ergo your vegan avo toast with figs recipe ain’t that vegan after all!!! Mind blowing.
