Today we are sharing with you what we think is the perfect protein-packed vegan stew for lunch or dinner! This split pea stew is hearty, loaded with a plethora of veggies and easy to make. PLUS with the addition of homemade bagel croutons, it is definitely a must try recipe!
Growing up, split pea soup was always on rotation in our household. It’s the perfect protein-packed meal that is not only really nutritious but also super tasty and satisfying.
This recipe is a take on its soup counterpart, but it’s a bit thicker, which is why we are calling it a stew! Although winter is nearing an end, this soothing stew can be enjoyed year round. This recipe is inexpensive and can be made in large quantities to serve to a large group or people, or to enjoy throughout the week.

Ingredients
Split Pea Stew with Vegan Ham
- 1 1/2 cups split peas
- 10 cups vegetable broth
- 1 large white onion, chopped
- 2 cloves garlic, minced
- 1 leek,ย dark green end discarded, sliced
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Dash of liquid smoke (optional)
- 1 teaspoon fresh marjoram
- 2 bay leaves
- 2 medium red boiling potatoes, cubed
- 2 large carrots, chopped small
- 1/4 cup fresh Italian parsley
- 1/2 package (2.5 oz.) vegan ham (we used Yves)
Bagel Croutons
- 1 plain bagel, halves and cut into cubes
- 2 tablespoons nutritional yeast
- 2 tablespoons vegan butter, melted
- 1/2 tablespoon dried oregano
- 1/2 teaspoon smoked paprika
- 1/2 tablespoon garlic powder
- Salt and pepper to taste
Instructions
Split Pea Stew with Vegan Ham
- Soak split peas for 2 hours, then drain, and pat dry.
- In a large pot over medium heat add 2-3 tablespoons of vegetable broth. Once heated, add the onions, garlic, and leeks. Cook for 3-4 minutes, or until onions become translucent, being sure to add more vegetable broth as needed to prevent burning.
- Add the smoked paprika, salt, pepper, liquid smoke, fresh marjoram, and bay leaves and stir until combined.
- Stir in the potatoes, carrots, split peas, fresh parsley, and vegan ham, along with the remaining vegetable broth. Cover and allow the mixture to come to a boil andย then simmer uncovered for 1.5-2 hours or until the broth cooks down to a stew-like consistency and the vegetables have softened. As the stew cooks, prepare the bagel croutons (directions below).
- Remove from heat and serve with a generous sprinkle of bagel croutons. Enjoy!
Bagel Croutons
- Preheat the oven to 350ยฐF and line a large baking sheetย with parchment paper or aย silicone baking mat.
- In a large bowl, add in the bagel cubes. Pour over the melted vegan butter and seasonings, then mix with a spatula or spoon to fully coat the bagel pieces. Pour onto the lined baking sheet and place into the oven for 8 to 10 minutes or until golden.
- Remove from the oven andย cool.
- Prep Time: 2 hours
- Cook Time: 2 hours
