We all know and love the traditional sweet flavors of oatmeal paired with cinnamon, maple syrup, fruits, and nuts, but have you ever had savory oatmeal? As a guy who prefers savory over sweet, the idea of this was right up my alley.
Instead of all the sweet fixings mentioned above, we loaded these oats up with celery, shallots, carrots, sweet potatoes, kale, and seasoned them to perfection. We also went a little crazy and topped them with vegan sausage and avocado—but how could you blame us?
Ideal for chilly fall mornings, this hearty bowl of savory oatmeal will warm you up and keep you full and fueled for hours on end. We did our best to combine the soft texture of oatmeal with the crunch of seeds + seasonal veggies providing a burst of flavor from fresh herbs.

2 vegan sausages, sliced (we used Field Roast Italian)
Green onions or chives
½ avocado, chopped
2 tablespoons roasted & shelled pumpkin seeds
Smoked paprika
Instructions
In a medium pot, add in the celery, shallot, garlic, and sweet potato along with about 2 tablespoons of the water. Sauté until the sweet potato has softened and the onions are translucent, about 6-8 minutes, adding more water as needed to prevent burning.
Add in the oats, remaining water, grated carrot and kale, and bring to a boil. Lower the heat and simmer, stirring often, until the oatmeal has cooked down and thickened, about 10-15 minutes.
If using vegan sausage, prepare it as the oatmeal cooks. Simply add the slices into a small pan over medium heat and cook until warmed through, about 4-5 minutes.
Once the oatmeal is done, stir in the nutritional yeast, rosemary, and green peas. Season with salt and pepper to taste.
Transfer the oatmeal to individual serving bowls and add toppings of choice. Serve warm.

What a yummy recipe! I have never tried savory oatmeal, and I think I should, hehehe! Anyways, I cannot believe this recipe is SO SO high in protein. I bet that the sausage tastes splendidly with the creamy and spicy oats!
