There’s nothing better than fresh almond milk in the morning, am I right? If you’ve ever made almond milk for yourself, you know how much pulp is left over after straining it. We are always trying to think up ways to put the almond pulp to use so we don’t have to throw it away. One of our favorite things to make are these incredibly delicious Almond Pulp Brownie Balls.


Leftover Almond Pulp Brownie Balls (Gluten-free)

Description
A healthy and delicious snack to make using the pulp from your homemade almond milk. These almond pulp brownie balls are the perfect snack for on the go!
Ingredients
- 1/2 cup gluten-free rolled oats
- 1/3 cup unsweetened shredded coconut (or use additional oats)
- 1/4 cup chia seeds
- 2 tablespoons cacao powder
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 12 Medjool dates, pitted
- 1/2 cup almond pulp, packed
- 1 teaspoon vanilla extract
- Almond milk or water as needed (I used 1 tablespoon)
Instructions
- In a food processor, add the rolled oats, coconut, chia seeds, cacao powder, salt, and cinnamon. Process until it reaches uniform and sand-like consistency.
- Add in the remaining ingredients (except for the almond milk) and process for about a minute or until a dough-like consistency is reached. The dough should be able to stick together when you squeeze it in between your index finger and thumb. If not, add 1 tablespoon of liquid at a time and process until incorporated.
- Roll into 1-tablespoon sized balls and store in an airtight container in the refrigerator for up to 1 week.
Notes
- If you would like to take these a step further, you can roll them in hemp seeds or cacao powder to make them extra fancy!

Was looking for the perfect recipe so I could use up the pulp from the almond & coconut milk I make every week, and this is it! I use 1 cup of almonds and 1/2 of shredded coconut in my homemade milk, and adapted this recipe worked beautifully! I doubled it and it was perfect. Do you think these would freeze well?
Great way to use leftover almond pulp. Delicious and guilt free. Unless you added some semi-sweet chocolate chips like I did ?
