Description

A healthy and delicious snack to make using the pulp from your homemade almond milk. These almond pulp brownie balls are the perfect snack for on the go!


Ingredients

  • 1/2 cup gluten-free rolled oats
  • 1/3 cup unsweetened shredded coconut (or use additional oats)
  • 1/4 cup chia seeds
  • 2 tablespoons cacao powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 12 Medjool dates, pitted
  • 1/2 cup almond pulp, packed
  • 1 teaspoon vanilla extract
  • Almond milk or water as needed (I used 1 tablespoon)

Instructions

  1. In a food processor, add the rolled oats, coconut, chia seeds, cacao powder, salt, and cinnamon. Process until it reaches uniform and sand-like consistency.
  2. Add in the remaining ingredients (except for the almond milk) and process for about a minute or until a dough-like consistency is reached. The dough should be able to stick together when you squeeze it in between your index finger and thumb. If not, add 1 tablespoon of liquid at a time and process until incorporated.
  3. Roll into 1-tablespoon sized balls and store in an airtight container in the refrigerator for up to 1 week.

Notes

  • If you would like to take these a step further, you can roll them in hemp seeds or cacao powder to make them extra fancy!
