Back at it again with another recipe, I have been on a roll lately and I am so pumped to be able to you all more healthy vegan recipes to try out, especially during this time of the year.
It’s that time of year again for the classic caramel apple, so I decided it would be perfect create a healthy vegan version that is actually good for you. Seriously, you could eat this for breakfast and feel amazing!
Last week I was in charge of making a few goodies for an all vegan baby shower and included in that were Vegan Caramel Apples. The baby shower was hosted by my friends Alex & Kristin of Mr. & Mrs. Vegan, and if you know them and myself, you would know that we both are adamant about abstaining from added oils. Vegan S’mores on a Stick w/ Oil-free Graham Cracker Granola
The holiday seasons are what I always am told are the hardest for people to stay healthy during and believe me, I agree and most definitely feel the same way. I want to tell you that of course it is absolutely okay to indulge and have some of your childhood favorites this time of year, and please do, BUT I also want you all to be aware that there are hundreds of amazing vegan versions of these classics all over the internet, giving you all the option to still be able to maintain this plant-based health filled lifestyle during this difficult time.
I love the holidays because I am able to bring a plant-based option to a non-vegan event and give my friends and family both a delicious and healthier option on the table. Some people are weary of a plant-based lifestyle because they are under the impression that they would have to give up the decadence and comfort their favorite recipes provide for them. The holiday season provides us with the perfect opportunity to prove otherwise!

Blend all of the ingredients except for the apples in a high speed blender until smooth, scraping down the sides if needed.
Prepare your desired toppings so they are ready to press onto the apples.
Use a spoon or butter knife to spread a thick later of caramel all around the apple.
Press (do not turn) apple onto desired toppings.
Place in the refrigerator for 20-25 minutes to stiffen.
Prep Time:40 mins
