I am currently munching on some of these chocolate banana peanut butter bites and I couldn’t be more excited for you to try them. Bananas and chocolate have always been one of my favorite flavor combos and adding peanut butter to the mix have been a game changer.

These chocolate covered peanut butter bites make the perfect snack for kids and adults alike. They can easily be made in large batches and kept in the freezer for simple, on-demand snacking. We can’t wait for you to try these out for yourself!

A few tips for this recipe!

  • Make sure that the bananas are ripe, but still firm. If the bananas are too ripe, they will be soft and harder to work with.
  • If you are allergic to peanuts or prefer not to use them, another thick and creamy nut OR seed butter will work in its place. The key is to use a nut or seed butter that is not runny to ensure that it sets properly. Sunflower, cashew and almond butter works great.
  • Store these bites in an airtight container in the freezer for up to one month. Be sure to allow these to sit out for a few minutes before eating if your teeth are sensitive to cold foods like me.
  • The chocolate may start to harden as you coat the bananas. This is normal and usually happens at the end of the batch as the temperature of the bananas encourages the chocolate to set. Just pop the chocolate in the microwave for 15 seconds or so to remelt it.

Description

Bananas, peanut butter,ย and chocolate, a match made in heaven. These are the perfect little bites to satisfy your sweet tooth and they couldn’t be easier to make!


Ingredients

  • 3 medium to large bananas, slightly ripe but still firm* (see notes)
  • 1/4 cup creamy peanut butter* (see notes)
  • 1 cup (8 oz.) vegan chocolate chips

Instructions

  1. Line a small baking sheet or plate with parchment paper and set aside.
  2. Peel the bananas and cut them into 1/4-inch slices. Arrange half of the slices onto the lined baking sheet and set the rest aside.
  3. Using a small spoon or butter knife, spread about 1/4-1/2 teaspoon of peanut butter onto the bananas slices on the baking sheet. Top each half with the remaining banana slices to form small โ€œsandwichesโ€ and set the baking sheet into the freezer for 2 hours to set.
  4. Once the banana peanut butter sandwiches are frozen, prepare the chocolate. Place chocolate chips into a microwave safe bowl and microwave them for 30 seconds and then stir. Continue microwaving the chocolate in 30-second intervals, mixing in between each, until they are fully melted.
  5. Remove baking sheet from the freezer. Using two forks, quickly coat each โ€œsandwichโ€ banana sandwich in the melted chocolate, being sure to shake off any excess chocolate, and place it back onto the baking sheet.ย The chocolate may start to harden as you coat the bananas. This is normal and usually happens at the end of the batch as the temperature of the bananas encourages the chocolate to set. Just pop the chocolate in the microwave for 15 seconds or so to remelt it.
  6. Return the baking sheet to theย freezer to set for 1 more hour or until solid. After the bites have frozen, transferย them into an airtight freezer-safe container for up to 1 month.

  2. Looks so freaking delicious! I have always loved bananas with peanut butter and dark chocolate. I could just eat a whole bowl of frozen bananas and dip them in peanut butter and some healthy chocolate syrup and call it the perfect dessert. What brand of chocolate chips did you use?

    1. We used chocolate chips from the bulk bins of our local Winco. They are not marked with a brand (or just may be Winco brand) but they are vegan and if you have a winco by you, we recommend them!
