Get ready for an easy one-pot weeknight dinner that requires just 7-ingredients and less than $5 to make! This taco pasta is the perfect meal for when you don’t have time to cook or don’t know what to make. It’s simple, satisfying, and won’t break the bank!

Chris and I challenged ourselves this week to come up with two vegan recipes that were easy to make, require simple ingredients, and budget-friendly. We made it a point to be more conscious of our spending this year and one of the ways we are doing that is by simplifying our grocery lists and spending less when we shop. We have also found that you all seem to love when we do one-pot, minimal ingredient and/or budget-friendly recipes, so here we go!

We started shopping at Winco after moving to Vancouver, WA and if you have one in your area, we highly recommend it. They have the largest bulk section I have ever seen and it has helped us produce way less food waste than ever before. For this recipe, we were able to buy our spices and pasta in bulk and purchase only as much as we needed, so we didn’t have any random ingredients left.

When it comes to pasta, the possibilities are endless. Think of the noodles as a canvas to add any and all flavors and ingredients in order to create a delicious dish. We already have a recipe for Instant Pot Pizza Pasta, so Taco Pasta was the next creation we thought to try. What’s next? Vegan Cheeseburger Pasta? I guess you’ll have to wait and find out!

This Taco Pasta is bursting with authentic taco flavor. It packs a little kick and is the perfect meal to whip up for your family after a busy day when you don’t feel like preparing something extravagant.

One Pot Taco Pasta (7-Ingredients)

Description

An easy one-pot weeknight dinner that requires just 7-ingredients and less than $5 to make! This taco pasta is the perfect meal for when you don’t have time to cook or don’t know what to make. Plus, it’s vegan!


Ingredients

  • 8 oz. shell pasta (or pasta of choice, gluten-free as needed)
  • 1 (15.25 oz.) can corn,ย drained
  • 1416 oz. red salsa of choice
  • 1 (15.5 oz) can black beans, drained and rinsed
  • 1 (2.25 oz.) can sliced black olives,ย drained
  • 2 tablespoons low-sodium taco seasoning
  • 1/4 cup fresh cilantro, roughly chopped
  • Black pepper, as desired

Optional add-ons

  • Vegan parmesan or mozzarella cheese
  • A drizzle of vegan sour cream
  • Sliced or pickledย jalapeรฑos
  • Tortilla strips

Instructions

  1. Cook pasta according to package directions.
  2. Once cooked, drain the pasta and add it back into the pot. Add all of the remaining ingredients and mix well. Enjoy!
