Today, I am here to share an extra special recipe. I don’t know about you, but I am a huge fan of breakfast, nachos, and tater tots, so I thought it would be fun to combine all three and make one epic recipe! I present to you, breakfast tater tot nachosโ€”also know asย totchos!

With Cincoย De Mayo just around the corner, we thought it would be timely to make nachos! While these are far from traditional, the combination creates a flavor explosion unlike any other. These tater tot nachos are loaded up with tofu scramble, pico de gallo, black beans, and the ultimate vegan chipotle cheese sauce! In under 30 minutes, you can whip up this recipe and make breakfast time a whole lot more enjoyable.

Breakfast Tater Tot Nachos aka Totchos {vegan}

Description

Tater tot breakfast nachos that will blow your mind! Made with tofu scramble, homemade pico, black beans, and a creamy vegan cheese sauce. Get ready to make breakfast time a whole lot more delicious!


Ingredients

Tater Tot Nachos (Totchos)

Homemade Pico De Gallo

  • ยฝ cup tomatoes, diced
  • ยผ cup red onions, diced
  • 1 tablespoon cilantro, roughly chopped
  • Juice of ยฝ lime
  • Salt & pepper to taste

Instructions

  1. Prepare tater tots according to package directions and set aside. We bake ours on a silicone baking mat.ย 
  2. Prepare the tofu scramble along with half a recipe of the chipotle cheddar cheese sauce and set aside.
  3. If making pico de gallo, simply mix all of the ingredients together until uniform.
  4. In a large plate or bowl, layer in the cooked tater tots, tofu scramble, black beans, and salsa or pico de gallo.ย Top with the chipotle cheddar cheese* and enjoy!

Notes

  • We transferredย our chipotle cheddar cheese sauce to a squeeze bottle, but dolloping it on with a spoon works just fine!

  1. My friend actually hosted a vegan taste testing party at a study lounge at my college yesterday, and the main dish was DIY tatchos! So creative and delicious. I never would have thought that that combination would work, but it totally did! This take on tatchos looks wonderful, and I bet it tasted even better!
