Come y Bebe (Ecuadorian Fruit Salad)

Come y bebe, which translates to “eat and drink”, is an Ecuadorian fruit salad made with fresh diced fruits and orange juice. You can eat it with a spoon or drink it straight from a glass, and it’s perfect as a breakfast, snack, and even dessert.

Come y bebe is a dish that always reminds me of my grandma as she used to serve it to us after meals at her house (either this or maduros). It not only is delicious, but it is good for ya and so easy to make!

You can customize it however you’d like, I just used my fave combo of fruits: mango, pineapple, oranges, banana ad papaya. Watermelon would be great in this as well! The riper the fruit, the sweeter the fruit, and the better the come y bebe will be.

You also have the option of adding a sweetener, but I left it out as my fruit was sweet and I squeezed some fresh sugar-sweet oranges.

Description

Come y bebe, which translates to “eat and drink”, is an Ecuadorian fruit salad made with fresh diced fruits and orange juice. You can eat it with a spoon or drink it straight from a glass, and it’s perfect as a breakfast, snack, and even dessert.


Ingredients

  • 6 cups fresh orange juice 
  • 1 large papaya (or two small) peeled and diced (about 3 cups)
  • 1 pineapple, diced
  • 3 bananas, diced
  • 1 mango, diced

Instructions

  1. If you are making fresh orange juice, I suggest juicing your oranges first.
  2. Add all of the diced fruit into a large bowl and pour over the orange juice.  Set aside.
  3. Mix and chill in the refrigerator for 30 minutes to an hour.
  4. Serve and enjoy!
