Green Juice MojitoThis Sweet Raw Green Juice Mojito was actually what I contributed to my family’s Easter celebration this year. They loved it, so I decided I would share it with you all here (this explains my ears in the photo, haha!).Green Juice Mojito32For any of you who are interested, I use the Omega VRT350 Juicer. It is a masticating slow juicer, and I love it as it draws out more juice from leafy greens, is a lot quieter than my old centrifugal juicer, and the juice can last up to 3 days sealed in the refrigerator (although it is of course optimal to drink it asap). I have had much success with mine over the last 2 years and highly recommend it 🙂

I had lots of spinach in my fridge, so that is what I went for. Sweet Raw Green Juice Mojito

  • Yield: 5-6

Ingredients

  • 5 large granny smith apples
  • 3 stalks celery
  • 2 large cucumbers, peeled if not organic
  • 23 cups spinach
  • Juice of 3 limes
  • Handful fresh mint

Instructions

  1. Run all of the ingredients through a juicer.
  2. Strain juice to remove pulp, if desired.
  3. Serve over ice or chilled.
  • Prep Time: 20 mins
