This citrus and berry chia pudding makes for the perfect breakfast on the go. All you have to do is blend, mix, and set it into the refrigerator overnight. You will have a meal ready for you in the morning with minimal effort!Chia pudding is something that we definitely need to eat more often in this house. Some days we don’t have a lot of time to put breakfast together, and with chia pudding, we have breakfasts ready for a few days with minimal effort!
We started Berry at a new camp/training program called Oregon Tails and his drop off time is 8AM about 30ย minutes away from home. On the mornings he has camp, the house is pretty chaotic I’m going to be honest. It has been really helpful to have a mean ready when we are running around preparing him for his day. It’s something less for us to think about!This recipe requires simple ingredients, and the hardest part is being patient enough to let it set in the fridge. Description
This citrus and berry chia pudding makes for the perfect breakfast on the go. All you have to do is blend, mix, and set it into the refrigerator overnight. You will have a meal ready for you in the morning with minimal effort!
Ingredients
- 1/2 cup blackberries*
- 1/2 cup strawberries*
- 1 1/2 cups almond milk
- 1/2 cup fresh orange juice
- 3 medjool dates
- 1/2 cup chia seeds
- 1/4 teaspoon vanilla extract (optional)
- 1 pinch sea salt
Instructions
- Blend all ingredients together except for the chia seeds.
- In a large jar or sealable container, add in the chia seeds and pour the blended mixture over. Mix until uniform and seal. Refrigerate for at least 3 hours, preferably overnight for best results.
- Serve with fresh berries, nutsย or granola!
