One of our favorite meals to make during the week is pasta. It’s easy to throw together, a great way to use up random vegetables in our refrigerator, it’s cheap and most importantly, satisfying. We wanted to spice things up a bit and change up our regular gluten-free pasta choice, so we decided to give gnocchi a try.

For some reason, we didn’t eat gnocchi much before this. Actually, I can’t even tell you the last time I had gnocchi because it has been that long! Well, after making this dish, that definitely won’t be happening again because we are hooked. I love how much more of a “bite” gnocchi has vs. regular ol’ pasta and it’s much more filling and satisfying to me. Plus, there are gluten-free options available on the market, make sure you check out the Trader Joe’s cauliflower gnocchi!

The one thing that I recommend you try when cooking a gnocchi dish is to pan fry the gnocchi a bit before mixing it together with the sauce, vegetables, etc.. That way, the gnocchi will be soft and fluffy on the inside and slightly crispy on the outside. It adds another layer of texture to the dish and I think that it also just looks much more presentable. The beauty of this dish is you can customize the vegetables to your liking! Don’t like asparagus? No worries, leave it out? Have some extra eggplant lying around? Dice it up and toss it in! The next time I make this, I definitely want to add in more summer produce, such as roasted corn. How good does that sound?

Description

Learn how to make this easy vegetable gnocchi dish with just a handful of simple ingredients and about 30 minutes of your time. It’s perfect for lunch or dinner, and makes a great on-the go dish for school or work!


Ingredients

  • 23 tablespoons extra virgin olive oil (or cooking oil of choice)
  • 16 oz. gnocchi (gluten-free as needed*)
  • 1/2 bell pepper, thinly sliced
  • 1/2 cup diced yellow onion
  • 3 cloves garlic, finely minced
  • 1/2 cup zucchini
  • 1/3 cup slices mushrooms
  • 4 spears of asparagus, ends removed and quartered
  • 14 oz. can diced tomatoes (or sub fresh)
  • 2 cups fresh spinach
  • 1 tablespoon Italian seasoning
  • 1/4 cup fresh basil, julienned
  • Vegan parmesan, to top
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the gnocchi according to the package directions. Once it has cooked, drain the gnocchi and set it aside.
  2. In a medium pan over medium heat, add in 1 to 1 1/2 tablespoons of oil along with the gnocchi. Cook the gnocchi, flipping often, until it is golden brown. Transfer the gnocchi to a clean plate.
  3. In the same pan over medium heat, add in the remaining 1 to 1 1/2 tablespoons of oil along with the bell peppers, onions and garlic. Sauté over medium heat for 3-4 minutes, or until the garlic is fragrant and the onions become translucent.
  4. Add in the zucchini, mushrooms, and asparagus. Continue to cook, mixing often, until these vegetables have softened, about 3-4 minutes.
  5. Mix through the tomatoes and allow the mixture to come to a simmer. Bring the heat down to low and simmer everything together for 5 minutes, mixing often.
  6. Add the fresh spinach, Italian seasoning and cooked gnocchi , and mic until well combined. Cook the mixture for a few minutes more or until the spinach has wilted. Season with salt and pepper to taste.
  7. Remove the pan from heat and divide into serving bowls. Top each with fresh basil and vegan parmesan, as desired. Enjoy!

  • Trader Joe’s sells a great cauliflower gnocchi that is gluten-free.
  • Feel free to customize this dish to your liking and change up the vegetable mixture however you’d like!

  1. Great recipe 🙂 I just use whatever vegetables I have on hand and it turns out great. I recommend using the petite diced tomatoes with garlic from walmart.






  2. Easy and delicious! Followed the recipe exactly, but I used a can of stewed tomatoes, and mini gnocchi. Very happy with it!
