Vegan Garlic and Black Truffle Aioli

This Vegan Garlic and Black Truffle Aioli will have you saying goodbye to store-bought aioli forever! Itโ€™s a breeze to make, loaded with flavor, and can be made at home with just a handful of simple ingredients.ย 

Ingredients Youโ€™ll Need 

  • Aquafaba:ย If youโ€™re asking yourself what the heck is aquafaba, itโ€™s the liquid from the can of chickpeas that can be used in place of egg in vegan cooking. Next time you use a can of chickpeas, save the liquid and use it for this aioli or evenย homemade aquafaba brownies.ย 
  • Lemon juice:ย An acidic element is essential for emulsifying oil. You can use various kinds of acids to do this, like white vinegar or apple cider vinegar if you donโ€™t have lemons on hand.
  • Salt and pepper:ย Helps improve the flavor of the aioli. You can use regular table salt, or if you want to get a little fancier, opt for Himalayan pink salt or table salt.
  • Dijon mustard:ย We prefer dijon mustard as it adds a smooth yet slightly more complex tang, but yellow mustard works too!
  • Garlic:ย Fresh garlic will yield the best flavor in this garlic aioli, but if youโ€™re in a pinch, ยผ teaspoon of garlic powder works well in its place.
  • Oil:ย An essential ingredient in any aioli thatโ€™s key for that rich, creamy emulsified texture.ย 
  • Black truffle oil:ย Also known as truffle-infused olive oil. We like to use this oil to incorporate truffle flavor into our dishes because itโ€™s shelf stable and slightly less expensive than fresh truffles.

How to Make Vegan Truffle Aioli

Making aioli from scratch requires just 3 simple steps: 

  1. Combine the aquafaba, lemon juice, garlic, salt, and mustard in a tall, narrow container.ย 
  2. Place the immersion blender into the container and begin blending. While blending, slowly drizzle in the oil and truffle oil in a steady stream until the mixture thickens into a creamy, mayonnaise-like consistency. With our immersion blender, this typically takes 1-2 minutes.
  3. Season with black pepper to taste.ย
