Ingredients You’ll Need
- Aquafaba: If you’re asking yourself what the heck is aquafaba, it’s the liquid from the can of chickpeas that can be used in place of egg in vegan cooking. Next time you use a can of chickpeas, save the liquid and use it for this aioli or even homemade aquafaba brownies.
- Lemon juice: An acidic element is essential for emulsifying oil. You can use various kinds of acids to do this, like white vinegar or apple cider vinegar if you don’t have lemons on hand.
- Salt and pepper: Helps improve the flavor of the aioli. You can use regular table salt, or if you want to get a little fancier, opt for Himalayan pink salt or table salt.
- Dijon mustard: We prefer dijon mustard as it adds a smooth yet slightly more complex tang, but yellow mustard works too!
- Garlic: Fresh garlic will yield the best flavor in this garlic aioli, but if you’re in a pinch, ¼ teaspoon of garlic powder works well in its place.

How to Make Vegan Truffle Aioli
Making aioli from scratch requires just 3 simple steps:
- Combine the aquafaba, lemon juice, garlic, salt, and mustard in a tall, narrow container.
- Place the immersion blender into the container and begin blending. While blending, slowly drizzle in the oil and truffle oil in a steady stream until the mixture thickens into a creamy, mayonnaise-like consistency. With our immersion blender, this typically takes 1-2 minutes.
- Season with black pepper to taste.
