This ube granola is crunchy, just the right amount of sweet, and loaded with texture from oats, almonds, and coconut flakes. Perfect for breakfast, snacking, or even dessert.
Ingredients You’ll Need
- Ube: For the perfect ube flavor and color, you’ll need a ½ cup of our homemade ube halaya and a few drops of ube extract. Use any leftover ube halaya to make our Ube Butter Mochi, Ube Ice Cream, or Ube Rice Krispie Treats!
- Oil: Coconut oil is great if you’d like to enhance the coconut flavor. Otherwise, we love neutral tasting oils like vegetable oil, avocado oil, or light tasting olive oils.
- Maple syrup: Adds a natural sweetness and helps to bind the granola clusters together while keeping it refined sugar free. You can also substitute in another liquid sweetener, such as agave or our simple syrup in a pinch!
- Rolled oats: The hearty base of any granola! We recommend using old-fashioned rolled oats for the best texture. Quick oats are too soft and mushy.
- Sliced almonds: Add a subtle crunch and nutty flavor that complements the nuttiness from the ube.
- Coconut flakes: Adds additional texture and a natural coconut flavor. We like to use unsweetened coconut flakes, but if you like your granola sweet, feel free to opt for sweetened coconut flakes.
- Seeds: A mix of chia seeds and flax seeds help to bind the granola clusters together and add additional texture.
How to Make Ube Granola
If you’ve made our peanut butter granola, making this ube granola is going to be a breeze!
- Preheat and prep. Set the oven to 375°F and line a baking sheet with parchment paper.
- Mix the wet ingredients. In a large mixing bowl, combine the ube halaya, ube extract, maple syrup, and oil.
- Add the oats, almonds, chia, and flax seeds. Mix once more until uniform.
- Spread and bake! Transfer the granola mixture to the lined baking sheet and spread evenly. Bake for about 25 minutes, or until golden and crispy.
- Cool for 20 minutes. Let the granola cool for at least 20 minutes before breaking it into clumps. Enjoy!
