With back to school (and all pumpkin everything) season in full swing, we wanted to share our take on a vegan energy bar as it is something we frequented when we were students ourselves. When we were in school, we opted for popular store-bought bars which were probably loaded with not the best ingredients, so today we are going to share with you a healthier option.
These pumpkin spiced moringa bars are loaded with more recognizable ingredients, can be made in less than an hour and a half at home (including the chilling time), and will give you the boost of energy you need for a long day at school or work.
The star ingredient of these energy bars is moringa powder. I actually grew up eating this superfood ingredient, but never actually realized how good it was for me. I knew it as malunggay, which is how you say moringa in tagalog!
The moringa plant is a large tree that is unlike many other plants in that the whole tree is suitable for human consumption, from its leaves to its flowers, pods, and seeds! Moringa supplies a healthy serving of iron and vitamin A, is rich in antioxidants, contains important adaptogens that naturally block stress from affecting the human body, helps to regulate the digestive system by providing a rich supply of calcium that will keep digestive enzymes functioning normally, and has a good supply of fiber, amongst other things. Description
You’d never guess that these Pumpkin Spice Moringa Energy Bars are healthy and gluten-free! They are loaded with healthy and easy to find ingredients, can be made in less than halfย an hour at home and will give you the boost of energy you need for a long day at school or work.
Ingredients
- 1 1/4 cup rolled oats
- 1 cup (96g) almonds
- 1/4 cup cacao powder
- 1/4 cup chia seeds
- 1 1/2 tablespoons moringa powder
- 1 teaspoon pumpkin pie spice (to taste)
- 1/2 teaspoon sea salt
- 1 ยฝ cups pitted dates (205 g), roughly chopped
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract (optional)
- 3–5 tablespoons of water
Instructions
- Add all of the ingredients up to the salt into a food processor and run until uniform.
- Add in the dates, maple syrup, vanilla extract and 3 tablespoons of water and run until a dough-like consistency is reached. To test if there is enough moisture, squeeze together a bit of the mixture in between your fingers. If it sticks together it is ready to go, and if not, add about 2 more tablespoons of water.
- Press the dough into a small dish (we used a glass dish of 11x8x4″) and flatten out as evenly as possible. Place into the refrigerator to set for at least 1 hour.
- Remove from the refrigerator and cut into bars. We cut ours into 7 (11 x 1 x 1 inch) bars.

- Store these in an airtight container in the refrigerator for up to 5 days.

I made these last night! I totally forgot to add the chia seeds and I ended up using some candied ginger and the last of some cacao nibs because thatโs all I had. Still delicious! I formed them into a bread pan and got 7 bars. How would one store these?
