Description

You’d never guess that these Pumpkin Spice Moringa Energy Bars are healthy and gluten-free! They are loaded with healthy and easy to find ingredients, can be made in less than half an hour at home and will give you the boost of energy you need for a long day at school or work.

Ingredients

  • 1 1/4 cup rolled oats
  • 1 cup (96g) almonds
  • 1/4 cup cacao powder
  • 1/4 cup chia seeds
  • 1 1/2 tablespoons moringa powder
  • 1 teaspoon pumpkin pie spice (to taste)
  • 1/2 teaspoon sea salt
  • 1 ½ cups pitted dates (205 g), roughly chopped
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract (optional)
  • 35 tablespoons of water

Instructions

  1. Add all of the ingredients up to the salt into a food processor and run until uniform.
  2. Add in the dates, maple syrup, vanilla extract and 3 tablespoons of water and run until a dough-like consistency is reached. To test if there is enough moisture, squeeze together a bit of the mixture in between your fingers. If it sticks together it is ready to go, and if not, add about 2 more tablespoons of water.
  3. Press the dough into a small dish (we used a glass dish of 11x8x4″) and flatten out as evenly as possible. Place into the refrigerator to set for at least 1 hour.
  4. Remove from the refrigerator and cut into bars. We cut ours into 7 (11 x 1 x 1 inch) bars.

Notes

  • Store these in an airtight container in the refrigerator for up to 5 days.
