Ingredients
- 1/2 cup coconut meat
- 1 1/2 cups almond milk, preferably raw
- 1 1/2 cups raw cashews, soaked for at least 3 hours preferably overnight
- 1/2 cup coconut oil
- 4–6 medjool dates, pitted
- 1 fresh vanilla bean
- 1/4 tsp almond extract
- Pinch of salt
Instructions
- Place all of the ingredients into a high speed blender and process until smooth.
- Pour into an ice cream maker and follow manufacturer’s instructions.
