Description

These Mini Spiced Pear Galettes are simple, rustic, and cozy. They combine tender, spiced pear slices with a flaky vegan butter crust and a maple glaze that ties everything together. Perfect for fall baking or any time you want a quick, elegant dessert.


Ingredients

Crust:

  • 2 cups (240g) all-purpose flour
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt
  • 12 tablespoons cold vegan butter, cubed
  • ¼-½ cup ice water

Pear filling:

  • 3 pears, thinly sliced
  • ¼ cup brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon cardamom
  • ½ teaspoon salt 

Assembly:

  • 1 tablespoon non-dairy milk
  • 1/2 teaspoon maple syrup 

Maple glaze:

  • 2 tablespoons maple syrup
  • 1 tablespoon melted vegan butter
  • ½ cup (60g) powdered sugar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla extract


Instructions

  1. Chill the butter. Cut the vegan butter into ½” cubes and place in the freezer for 15 minutes.
  2. Make the dough. In a large bowl, mix the all-purpose flour, sugar, and salt. Pinch the frozen butter into the flour with your fingertips until distributed and the butter is broken into irregular pieces. If the butter becomes too soft, place the bowl into the freezer before continuing.
  3. Add ¼ cup of ice water. Use a spatula to mix and press together to form a shaggy dough. If the dough is too dry and doesn’t hold together when pressed, add more ice water, one tablespoon at a time. Note that it should be pretty dry. 
  4. Chill the dough. Dump the dough onto a sheet of plastic wrap and lightly knead to bring the dough together into a rough disk. Wrap the dough tightly in plastic and place it in the fridge for 4 to 24 hours.
  5. Remove the dough from the fridge and preheat the oven to 375˚F.
  6. Prepare the filling. Add all of the filling ingredients to a large bowl and mix together until combined. 
  7. Roll out and cut the dough. Unwrap the dough and flour on both sides, then roll out until about ⅛” thick. Use a 6-8” bowl or cookie cutter to cut circles out of the dough. You will have to reroll the remaining crust once or twice. Depending on the size of your circles, you should get between 6-8 mini galettes. 
  8. Arrange the rounds on a baking sheet. Add some of the spiced pear slices to the center of each round, leaving about a 1” border on the outside. Gently fold the outer edges of the dough over the filling. Brush the edge of the dough with non-dairy milk.
  9. Bake. Place into the oven for 25-30 minutes, or until the crust is golden brown.
  10. Prepare the maple glaze. Whisk together all the glaze ingredients in a small bowl until smooth. 
  11. Cool. Once the galettes are done baking, allow them to cool for at least 10 minutes.
  12. Serve. Drizzle with the maple glaze and enjoy!

Notes

  • Storage: Refrigerate leftovers in an airtight container for up to 4 days.
  • Reheating: Warm in oven at 350°F for 5–10 minutes to restore crispness.
  • Freezing: Place unbaked galettes on a tray to freeze, then transfer to a freezer bag for up to 2 months. Bake from frozen, adding 5–7 minutes to the bake time.
