Description
Looking for a quick and easy way to use up your peaches? Grill them with a touch of maple syrup! These grilled peaches make for the perfect snack or dessert and are a great way to keep things light this summer.
Ingredients
- 3 peaches, halved and pitted* (see notes)
- Maple syrup* (see notes)
- 6 scoops vegan vanilla ice cream (we used So Delicious)
Toppings, such as
- 6-Ingredient Stovetop Granola (or granola of your choice)
- Maple syrup
- Cinnamon
- Salt
- Candied pecans or nuts of your choice
Instructions
- Oil the clean grill grates and set the grill to a medium heat.
- Using a pastry brush, generously brush each side of the peaches with maple syrup.
- Place the peaches cut-side down on the grill for about 3 to 5 minutes. Keep an eye on them to be sure that they do not burn. Flip the peaches and cook for an additional 3 to 5 minutes, or until tender.
- Remove the peaches from heat. You can either serve them right away or allow them to cool before serving.
- Serve the peaches with toppings of your choice. We like to add a scoop or two of vegan vanilla ice cream, a drizzle of maple syrup, a sprinkle of both cinnamon and salt plus a handful of granola.
Notes
- Be sure the peaches that you use are still firm when squeezed. If the peaches are too ripe, they will be too soft to take the heat and turn into a mushy mess.
- If you would like, you can brush the peaches with olive oil instead of maple syrup if you would like to decrease the sweetness of this recipe.
- Grill the peaches over medium heat and grill them until tender but not mushy! You still want the peaches to hold their shape when serving.
