Description

This s’mores inspired Vegan Baked Oatmeal recipe is an extra sweet spin on the viral Tiktok baked oats. Enjoy for breakfast or dessert alongside a glass of homemade almond milk. All you need is 12 simple ingredients to make. 


Ingredients

  • 1 cup (100g) rolled oats
  • 1/2 cup unsweetened non-dairy milk
  • 1 ripe banana
  • 3 tablespoons nut or seed butter
  • 2 tbsp maple syrup (or liquid sweetener of choice)
  • 1 tablespoon flaxseed meal (or chia seeds)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup (50g) dark chocolate chips
  • ⅔ cup (55g) mini vegan marshmallows
  • ½ cup (30 g) broken-up graham crackers, about 2 sheets

Instructions

  1. Preheat the oven to 350°F and adjust the rack to the middle of the oven. Lightly grease a small baking dish and set it aside.
  2. To a high-speed blender, add in the rolled oats and blend until they become fine oat flour.
  3. Add in all the remaining ingredients except chocolate chips, marshmallows, and graham crackers, and blend until smooth.
  4. Add half the chocolate chips and half the mini marshmallows. Mix them in by hand using a spoon or spatula.
  5. Transfer the batter to the prepared baking dish, ensuring it is spread out evenly. Sprinkle the remaining chocolate chips, marshmallows, and graham crackers over the top.
  6. Bake for 25 to 30 minutes, or until a toothpick inserted in the middle comes out clean and golden brown.
  7. Allow the dish to cool for about 5 minutes before serving, and then dig in.
