Description

Baking this easy-to-make spiced Vegan Apple Cobbler at home is the perfect way to welcome fall and colder weather. Serve warm from the oven with a scoop of your favorite vegan vanilla ice cream for a nostalgic warm treat. All you need is 10 ingredients and less than an hour to bake!


Ingredients

  • ½ cup (1 stick) vegan butter

Batter:

  • 1 cup (120g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 1½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup oat milk
  • 1 teaspoon vanilla extract

Apple mixture:

  • 12 oz (340g) apples, cut into ¼” slices
  • ¼ cup (50g) brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg (optional)

Serve with:

  • Vegan vanilla ice cream

Instructions

  1. Preheat the oven to 375ºF.
  2. Cut the vegan butter into cubes and add it to a 9×9” or similar size baking dish. Put in the oven for 5 minutes or until the butter is melted.
  3. In a medium bowl, add the apple slices, brown sugar, cinnamon, and nutmeg. Mix together and set aside.
  4. Whisk together the flour, sugar, baking powder, and salt in a separate bowl. Then add the oat milk and vanilla extract and whisk until combined–a few lumps are fine.
  5. Pour the batter evenly into the baking dish over the melted butter.
  6. Dump or neatly arrange the apple slices on top. Make sure to pour on any extra juices left in the bowl.
  7. Bake for 45-50 minutes or until a toothpick comes out clean. Serve warm with vegan vanilla ice cream, and enjoy!
