Description
Baking this easy-to-make spiced Vegan Apple Cobbler at home is the perfect way to welcome fall and colder weather. Serve warm from the oven with a scoop of your favorite vegan vanilla ice cream for a nostalgic warm treat. All you need is 10 ingredients and less than an hour to bake!
Ingredients
- ½ cup (1 stick) vegan butter
Batter:
- 1 cup (120g) all-purpose flour
- ½ cup (100g) granulated sugar
- 1½ teaspoon baking powder
- ½ teaspoon salt
- ¾ cup oat milk
- 1 teaspoon vanilla extract
Apple mixture:
- 12 oz (340g) apples, cut into ¼” slices
- ¼ cup (50g) brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg (optional)
Serve with:
- Vegan vanilla ice cream
Instructions
- Preheat the oven to 375ºF.
- Cut the vegan butter into cubes and add it to a 9×9” or similar size baking dish. Put in the oven for 5 minutes or until the butter is melted.
- In a medium bowl, add the apple slices, brown sugar, cinnamon, and nutmeg. Mix together and set aside.
- Whisk together the flour, sugar, baking powder, and salt in a separate bowl. Then add the oat milk and vanilla extract and whisk until combined–a few lumps are fine.
- Pour the batter evenly into the baking dish over the melted butter.
- Dump or neatly arrange the apple slices on top. Make sure to pour on any extra juices left in the bowl.
- Bake for 45-50 minutes or until a toothpick comes out clean. Serve warm with vegan vanilla ice cream, and enjoy!
