Ingredients
- ½ cup ube halaya
- 1/4 cup neutral oil
- 2 tablespoons maple syrup
- 1/2 teaspoon ube extract
- 1/4 teaspoon salt
- 2 1/2 cups rolled oats
- 1 cup unsweetened coconut flakes
- 2/3 cup sliced almonds
- 2 teaspoons chia seeds
- 2 teaspoons flax seeds
Instructions
- Preheat and prep. Set the oven to 375°F and line a baking sheet with parchment paper.
- Mix the wet ingredients. Combine the ube halaya, ube extract, maple syrup, oil and salt in a large mixing bowl.
- Add the oats, almonds, chia, and flax seeds. Mix once more until uniform.
- Spread and bake! Transfer the granola mixture to the lined baking sheet and spread evenly. Bake for about 20-25 minutes, or until golden and crispy.
- Cool for 20 minutes. Let the granola cool for at least 20 minutes before breaking it into clumps. Enjoy!
Notes
- Storage: This homemade granola should keep for up to 2 weeks when stored in an airtight container at room temperature. Avoid storing it in the refrigerator – the moisture will cause the granola to become soggy.
