Ube Coconut Granola Recipe

Description

This ube granola is crunchy, just the right amount of sweet, and loaded with texture from oats, almonds, and coconut flakes. Perfect for breakfast, snacking, or even dessert.


Ingredients

  • ½ cup ube halaya
  • 1/4 cup neutral oil
  • 2 tablespoons maple syrup
  • 1/2 teaspoon ube extract
  • 1/4 teaspoon salt
  • 2 1/2 cups rolled oats
  • 1 cup unsweetened coconut flakes
  • 2/3 cup sliced almonds
  • 2 teaspoons chia seeds
  • 2 teaspoons flax seeds


Instructions

  1. Preheat and prep. Set the oven to 375°F and line a baking sheet with parchment paper.
  2. Mix the wet ingredients. Combine the ube halaya, ube extract, maple syrup, oil and salt in a large mixing bowl.
  3. Add the oats, almonds, chia, and flax seeds. Mix once more until uniform.
  4. Spread and bake! Transfer the granola mixture to the lined baking sheet and spread evenly. Bake for about 20-25 minutes, or until golden and crispy.
  5. Cool for 20 minutes. Let the granola cool for at least 20 minutes before breaking it into clumps. Enjoy!

Notes

  • Storage: This homemade granola should keep for up to 2 weeks when stored in an airtight container at room temperature. Avoid storing it in the refrigerator – the moisture will cause the granola to become soggy.
