Easy Chocolate Covered Strawberries

Description

Learn how to make these chocolate covered strawberries with just 3 simple ingredients and about 30 minutes of your time.


Ingredients

  • 1 lb. medium to large strawberries
  • 1 cup semisweet vegan chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. Remove the strawberries from the refrigerator and gently wash them. Dry the strawberries as best you can as water can cause the chocolate to not set properly.
  2. Melt the chocolate. You can do this two ways.
    1. Microwave: Place the chocolate chips and coconut oil into a microwave safe bowl and warm for 30 seconds. Remove from the microwave and mix. Continue microwaving it in 30 second intervals, mixing in between each, until fully melted.
    2. Double Boiler: Place a small pot on the stove and add 1-2 inches of water and bring that to a simmer. Reduce heat to low and place a dry, shallow, heat-safe mixing bowl over the saucepan with the chocolate chips and the coconut oil. Be sure that the bowl is big enough to create a “seal” between itself and the pot so that the steam will be trapped in the pot. The steam will begin to melt the chocolate. Constantly mix the chocolate with a heat-safe utensil until all of the chocolate has melted. Remove from heat.
  3. The chocolate will be runny after melting, so allow it to cool briefly to thicken up slightly before you begin to dip the strawberries. Line a large baking sheet with parchment paper or a silicone mat.
  4. Hold the strawberry by the leaves and dip into melted chocolate, allowing any excess to drip off. Gently slide the bottom of the strawberry along the rim of the bowl to remove any excess and prevent the chocolate from “pooling” under the strawberry as it sits on the baking sheet. Place the strawberries onto prepared baking sheet and continue until you have covered all of the strawberries.
  5. Optional: We like to give our strawberries an additional drizzle of melted chocolate to bring them to the next level. For this, use any leftover chocolate that you have and gift it a quick reheat in the microwave to loosen it up OR if necessary, melt an additional 1/4 cup of chocolate with 1/2 teaspoon of coconut oil. Then, immediately transfer the melted chocolate to a piping bag with a very small tip and liberally drizzle it over the chocolate dipped portion of the strawberries. You can also do this with vegan white chocolate to elevate the strawberries!
  6. Place the baking sheet into the refrigerator and allow the chocolate set, about 15-20 minutes.
  7. For best results, serve within 12 hours of coating with chocolate.

Notes

  • Chocolate: We prefer to use dark or semi sweet chocolate and we get ours from Trader Joe’s or Enjoy Life. You can use chocolate chips, chocolate chunks, or chocolate bar for this recipe, just be sure the chocolate is chopped into uniform pieces for even melting. If you want to get extra fancy, you can even get vegan white chocolate and drizzle it over the dark chocolate coating.
  • Coconut Oil: This will help get the chocolate nice and silky when it’s melted, making it the perfect consistency for dipping. If you aren’t a huge fan of coconut, we recommend using refined coconut oil which won’t have the taste of coconut.
  • Strawberries: Be sure to choose firm strawberries, avoiding bruises as much as possible. We also recommend that you use ripe strawberries for the best flavor, so look out for strawberries that are red all the way up to the stem.
  • Water: At all costs, avoid the melted chocolate coming in contact with water. When the melted chocolate comes into contact with water, even the smallest amount, it will turn into a gritty, rough and unworkable paste.
  • Toppings: You can take these to the next level by adding toppings to the strawberries after dipping them into the melted chocolate. Here are a few ideas:
    • Shredded Coconut
    • Crushed vegan cookies or graham crackers
    • Chopped nuts
    • Crushed pretzels
    • Cacao nibs
    • Crushed freeze dried berries
    • Sprinkles
