We created the perfect sweet & savory breakfast sweet potato boats that are easy to make and the perfect way to start your day!
Ingredients
Sweet Breakfast Sweet Potato Boat:
- 1 baked sweet potato
- Drizzle of almond butter (we use Jem Superberry Almond Butter)
- 1/2 banana, sliced
- 1/4 cup granola (check out our favorite oil-free granola here)
- Dried mulberries
- Goji berries
- Shredded coconut
- Sprinkle of pumpkin pie spice (or cinnamon)
Sweet Breakfast Sweet Potato Boat:
- 1 baked sweet potato
- 1/4–1/3 cup black beans
- 1/4 cup fresh spinach
- 1 tablespoon pico de gallo
- 1/4 avocado, sliced
- ~1 oz. Kite Hill cream cheese + 1 tablespoon water
- Everything bagel seasoning
Instructions
- To bake sweet potatoes: Thoroughly wash and prick your sweet potatoes each 2-3 time with a fork or knife. Wrap them in parchment paper and then with foil, then place them directly on the oven rack in the middle of the oven. Turn the oven on to 425F and bake for 40 minutes or until sweet potatoes are soft. Cool before using. *
- To make the sweet breakfast sweet potato boats: add in all of the ingredients, adjusting the ratios as desired and dig in!
- To make the savory breakfast sweet potato boats: Whisk the cream cheese with water in a small bowl until smooth and set aside. Add in the spinach, black beans, pico de gallo and avocado, then drizzle with the cream cheese as desired, and top with everything bagel seasoning.
Notes
- If you don’t have an oven, you can boil or steam the sweet potatoes.
- Feel free to use any fillings/toppings as desired and available!
