Vegan Neapolitan Waffle Sundaes {oil-free}

Ingredients

Chocolate Ice Cream

  • 3 frozen bananas, chopped or broken into pieces
  • 1 1/2 tbsp cacao powder
  • Dash of cinnamon

Vanilla Ice Cream

  • 3 frozen bananas, chopped or broken into pieces
  • 1/4 tsp vanilla bean powder or extract
  • 1/4 tsp cinnamon

Strawberry Ice Cream

  • 3 frozen bananas, chopped or broken into pieces
  • 1/3 cup fresh strawberries, diced

Maple Chocolate Syrup

  • 1/4 cup maple syrup
  • 23 tbsp cacao powder

Toppings

  • Fresh berries
  • Sliced bananas
  • 3-Ingredient Oil-free Waffles (recipe at the bottom of this blog post)
  • Maple Chocolate Syrup (above)
  • Mulberries
  • Cacao nibs

Instructions

Chocolate Ice Cream

  1. Process in a food processor until fluffy, then place into a container into the freezer until assembly.

Vanilla Ice Cream

  1. Process in a food processor until fluffy, then place into a container into the freezer until assembly.

Strawberry Ice Cream

  1. Process in a food processor until fluffy, then place into a container into the freezer until assembly.

Maple Chocolate Syrup

  1. Blend or whisk together until smooth. Start with 2 tbsp, then add the last tbsp if the consistency is too thin.

Assembly

  1. Place a waffle and banana slices into a small bowl. Add in 1 scoop of each ice cream flavor, then add toppings of choice. Drizzle with chocolate syrup.
  2. Dig in!
