Raw Chocolate & Coconut Vanilla Ice CreamI can never get over how creamy and dreamy banana ‘nice’ cream is. Its seriously so much better than any of that Dreyer’s I used to eat (rock hard sometimes) as a kid. I love to use this dish to encourage people to consider veganism, or simply increasing the amount of plant-foods into their diet. Banana nice cream has never been a miss in my kitchen, and I encourage you to try it for this reason! Make it for yourself or make it for you to share with a loved one (you’ll have to make 2 servings….maybe three..don’t say I didn’t warn you).

There are two main reasons why I am told a high raw, or even a vegan diet in general, does not work for everyone. I am here to tell you why I think that these reasons are not valid, and are often just misunderstandings and misjudgments.The first is that eating a diet that is higher in raw foods is hard because they like sweets. Uhhhh…..do you not see the above photo? My family especially are ice cream fiends! We always used to have at least 2 pints of ice cream in our freezer growing up and only until about a year ago did this stop. It was hard to get off of it, but banana ice cream did the trick. Banana ice cream is sweet and creamy, and will satisfy those late night ice cream cravings for sure. Throw in some medjool dates or coconut sugar if you need to sweeten it up a bit, but I doubt you will need to. If you wait until your bananas are super spotty and ripe, they will be sweet enough to go without the added dates in the ice cream.

The second reason that this diet is “not practical” is that the time to prepare food increases. This one is definitely a huge misconception. This banana ice cream took under 5 minutes to make! All  I did was place chunks of frozen banana into the food processor with added flavorings of choice and ran it until smooth. Plus, to simplify cooking and prep time, increase the amount of raw foods in your diet. Grabbing an apple or two is so much faster than it will be fore you to prepare a piece of fish or chicken, right? So is processing some frozen bananas with coconut, cinnamon + vanilla to make ice cream!

So grab some bananas, freeze them up, and make yourself some dang banana ice cream (I hope you get this reference)…Enjoy!

Ingredients

  • Chocolate Layer
  • 2 frozen bananas, chopped
  • 1/2 tbs carob (or cacao) powder
  • Pinch of vanilla powder or extract
  • Coconut Vanilla Layer
  • 2 frozen bananas, chopped
  • 1 tbs unsweetened coconut
  • 1/8 tsp cinnamon
  • Pinch of vanilla powder or extract

Instructions

  1. Process all the ingredients of the coconut vanilla layer, set aside.
  2. Process all the ingredients of the chocolate layer, set aside.
  3. Layer into a serving jar or glass.
  4. Serve topped with slices of frozen banana, or any toppings of choice.
