A healthy twist on a childhood classic that will having you coming back for more! Not only does this taste delicious, but you will feel great after eating it as well 🙂

I personally loved eating sloppy joes (as a kid and even now) with rice, but Chris prefers it in it’s tradition setting, between two pieces of bread. Feel free to add in anything else as you please, greens and veggies sounds perfect for this.

Before I began blogging myself, there were a handful of bloggers (of all kinds: fashion, food, moms, etc.) that I loved and followed weekly. It was so fun to be able to read and see the different perspectives of these individuals during the same time period of my life.

The blog Oh Dear Drea, written by Andrea Duclos was one of those. She was (well, is) actually both a mom and food blogger, so it was fun to see her blog evolve when her daughter Marlowe was born and how her and her husband ate with their new love bug at home! It’s kind of crazy to see that her daughter is now all grown up, it does not feel like it was that long ago that I began reading about her baby!

Andrea wrote a beautiful cookbook, The Plantiful Table, and today I will be sharing a recipe with you all from it. I chose a recipe that is not only SOOO easy, but it is also pretty nostalgic for me. Easy Lentil Sloppy Joes {oil-free}

Ingredients

Sloppy Joes Base

  • 23 tbsp vegetable broth
  • 1 small bell pepper, diced
  • 1 small onion, diced
  • 1 cup (190g) dried green lentils
  • 2 cups (500 mL) water

Sloppy Joes Sauce

  • 1/2 cup (120g) ketchup
  • 1 tbsp apple cider vinegar
  • 1 tsp soy sauce
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 1/2 cups (350mL) water

Instructions

  1. In a medium pot over medium heat, add the vegetable broth, pepper and onion. Saute until tender and translucent.
  2. Mis in the lentils and the water and simmer until the lentils are soft, about 20-25 minutes.
  3. While the lentils are simmering, make your sauce by combining all the sauce ingredients in a medium pot and simmering over medium heat for 20 minutes.
  4. When the lentils are done, mix the sauce together with the lentil mixture. Serve on toasted buns or with rice and veggies 🙂

  1. I wasn’t too crazy about anything sloppy Joes, but lentils are definitely something I am crazy about! This is really creative, especially since this is the first vegan Sloppy Joes recipe I’ve seen that doesn’t use jackfruit!

  2. I haven’t had sloppy Joe’s in FOREVER and this is definitely making me drool! What a great vegan alternative to a common comfort food.
