Since I am doing my #acaitreat shares on Instagram, I decided to do an Acai Dessert that you can have whenever you want. Why? Well who doesn’t love eating GUILT FREE desserts? I sure do!
I created a recipe that is refined sugar-free, gluten-free, oil-free, and still jam packed with flavor! It tastes as if it should only be enjoyed on occasion, but heck, have this whenever you want! I had this for breakfast and it was awesome. No guilt, no regrets, and no sluggish feelings. I felt energized, light, and wanted to go back for seconds!
Baked apples are usually filled with butter and brown sugar, but honestly, that is not necessary at all. The apples become so sweet and juicy on their own, and depending on what type of apple you use, it can be make sweeter or more tart. I sprinkled mine with cinnamon, and when removing it from the oven, I had to restrain myself from devouring them before I had even made the other ingredients. It smelled like apple pie!
The jam was so easy to make as well. Depending on how much time you have, I suggest letting it sit over night so that you get the best “jam-like” consistency from it. The color threw me off a bit, but the flavor made up for that. It is a unique flavor that is not usually included in jams, plus it has all of the added benefits of acai!
Last but not least is the granola. I shared this recipe a few days ago, so you can read about it + all of the benefits of acai and quinoa on that post as well. So without further or do, I present to you your new favorite sweet treat!
2 medjool dates (optional) or any desired sweetener
Instructions
Baked Apples
Preheat your oven to 400F. Slice your apples in half, and remove the core.
Place apples in an oven safe dish, cut side up, and sprinkle with cinnamon.
Bake for 35-40 minutes, or until desired softness is reached.
Acai Chia Seed Jam
Blend together all of your ingredients except for the chia seeds and coconut.
Place into a large jar (or container) Throughly stir in your chia seeds and coconut, and allow it to sit and thicken for at least 2 hours, preferrably overnight for best results.
Acai Superfood Quinoa Granola (Gluten Free)
Preheat your oven to 350F and line a baking sheet with parchment paper.
Stir together all of your ingredients except the acai, goji berries, coconut butter and medjool dates.
Blend together the acai, coconut butter and optional medjool dates.
Throughly stir all ingredients together, then spread out on the baking sheet.
Bake for 24 minutes, stirring halfway through.
Allow it to cool, then mix in goji berries.
Assembly: Place your apples on a plate, top with jam, granola and any other desired toppings.

This was definitely a recipe that I am going to remake all the time! My whole family loved it, and we all ended up adding additional toppings of our own to customize them to our liking. Mine included shredded coconut and bananas, as pictured! Some ideas that my family included are: cinnamon, mulberries, strawberries, blueberries, coconut cream, nut butter and pineapple!
