Description

This Vegan Corn on the Cob recipe is the opposite of boring. Imagine grilled sweet corn that’s slathered in buffalo sauce, drizzled with creamy vegan ranch dressing, then sprinkled with vegan parmesan, fresh parsley and chives. It’s a flavor-packed summer side dish you don’t want to miss out on!

Instructions

  1. Grill the corn to your desired doneness. Check out our post here on how to grill perfect corn.
  2. Once it is easy to handle, remove the husks.
  3. Using a pastry brush or a spoon, cover the corn with as much buffalo sauce. Dress the corn up with the remaining ingredients as desired. You can dress up just one side or do it all around, your choice. Enjoy!

Notes

  • Fresh Corn on the Cob: We recommend getting corn still in the husks for this recipe. When the corn is on the grill the husks will help the corn cook to perfection and also prevent burning.
  • Buffalo Sauce: If you’re looking for a good dairy-free buffalo sauce, we like the one Primal Kitchen Dairy-Free Buffalo Sauce with ash a well as Frank’s Red Hot Buffalo Wings Sauce
  • Vegan Parmesan: We like to use Follow Your Heart parm crumbles for this recipe as opposed to a shredded parm since it’s easier to coat the corn with. If you don’t have parm, you can also sprinkle nutritional yeast over your corn in its place.
  • Dairy-Free Ranch Dressing: We like to make our own, but we also enjoy using the Daiya or Follow Your Heart ranch dressings. If you aren’t a fan of ranch, vegan bleu cheese is also an option. Pro Tip: If you want to drizzle the ranch perfectly use a squeeze bottle!
