Description

No need for store-bought microwave popcorn again! This quick, cheap and easy snack is perfect for summer parties or movie nights at home. The fiesta seasoning gives it a unique kick that everyone will love.

Ingredients

Fiesta Seasoning

  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon organic chili powder
  • 1/4 teaspoon cumin
  • 1/8 teaspoon turmeric
  • 3/4 teaspoons salt*

Stovetop Popcorn

  • 2 tablespoons coconut oil (for popping)
  • 1/3 cup unpopped popcorn kernels
  • 2 tablespoons vegan butter

Instructions

  1. For the seasoning: Combine all of the spices for the seasoning mixture in a small bowl. Mix until uniform and then transfer into a spice or coffee grinder, or even a small food processor. Blend until it becomes a fine powder. Set aside.
  2. For the popcorn: In a large pot over medium-high heat, add in the coconut oil. Once melted, add in 3 popcorn kernels and wait for these to pop. These are the “testers” that will help you determine when the oil comes to the proper temperature for popping.
  3. Once all 3 kernels have popped, add in the remaining kernels in an even layer, shaking the pot to spread them out. Cover the pot and remove it from heat for 30 seconds. This is to ensure that all of the kernels come to popping temperature before adding it back on the heat, so they will pop at the same time.
  4. Return the pot to heat. The popcorn should begin popping! Once popping, gently shake the pan by moving it back and forth over the burner. Keep the lid slightly ajar to allow the steam to escape.
  5. Once the popping slows down (to several seconds between pops), take off the lid and remove the pan from the heat. Dump the popcorn into a large bowl.
  6. Add the pot back onto medium heat and add in the vegan butter. Heat until melted and then pour over the popcorn. Toss to evenly coat.
  7. Add on your desired amount of seasoning and salt and toss once more to combine. Enjoy!
