If you’ve been following us for even a short period of time, you know we both eat a bit differently. Jasmine prefers very sweet and simple meals, and I prefer things more on the savory and salty side. For this recipe, we thought it would be fun to bring both of our worlds together, and share a sweet version and a savory version so that there is a little something for everyone. Easy & filling Vegan Breakfast Boats! The combination of granola, sliced banana, nut butter and superfood toppings was a hit with her! Easy & filling Vegan Breakfast Boats! I am a burrito lover, so I decided to take familiar ingredients and flavors, and bring them into this stuffed potato. It has a mix of beans, green, pico de gallo, avocado, cream cheese in place of sour cream and everything bagel seasoning because we have been hooked on it!

Sweet & Savory Breakfast Sweet Potato Boats — 2 Ways!

Description

We created the perfect sweet & savory breakfast sweet potato boats that are easy to make and the perfect way to start your day!


Ingredients

Sweet Breakfast Sweet Potato Boat:

Sweet Breakfast Sweet Potato Boat:

  • 1 baked sweet potato
  • 1/41/3 cup black beans
  • 1/4 cup fresh spinach
  • 1 tablespoon pico de gallo
  • 1/4 avocado, sliced
  • ~1 oz. Kite Hill cream cheese + 1 tablespoon water
  • Everything bagel seasoning

Instructions

  1. To bake sweet potatoes: Thoroughly wash and prick your sweet potatoes each 2-3 time with a fork or knife. Wrap them in parchment paper and then with foil, then place them directly on the oven rack in the middle of the oven. Turn the oven on to 425F and bake for 40 minutes or until sweet potatoes are soft. Cool before using. *
  2. To make the sweet breakfast sweet potato boats: add in all of the ingredients, adjusting the ratios as desired and dig in!
  3. To make the savory breakfast sweet potato boats: Whisk the cream cheese with water in a small bowl until smooth and set aside. Add in the spinach, black beans, pico de gallo and avocado, then drizzle with the cream cheese as desired, and top with everything bagel seasoning.

Notes

  • If you don’t have an oven, you can boil or steam the sweet potatoes.
  • Feel free to use any fillings/toppings as desired and available!

  1. I used to eat the sweet-style boat ALL the time for breakfast, and I already miss it! My sweet potato was probably over two pounds though, hahaha! Kept me full for hours, and I could customize the toppings all the time!
