Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt (optional)
  • 1 tsp. cinnamon
  • 1/2 cup sugar
  • 1 large banana, mashed
  • 1/2 cup applesauce
  • 1 tsp. vanilla extract
  • 1 1/2 cups grated zucchini
  • 1/4 vegan chocolate chips
  • 1/3 cup raisins or dried cranberries (optional)

Instructions

  1. Line a bread pan with parchment paper and preheat the oven to 350F.
  2. Mix all of the ingredients in a large bowl.
  3. Bake for 45-50 minutes.

    I tried this old recipe last Week and it was the most delicious cake I had in a while ! It turned out a bit like a pudding : not fluffy but dense and fudgy ! The texture was a bit weird but I loved it and I share it with friends : they liked it too ! Thank you for this wonderful recipe, light and perfect for spring !
