My boyfriend Chris and I stepped back into the kitchen to bring to the table yet another easy and delicious vegan spread for the holiday season. All of these recipes are oil-free, low-fat, and can all be made gluten-free as well. We wanted to share dishes that were comforting and familiar, featuring flavors our family and readers would be receptive too.

Crispy Baked Rice Balls (recipe on Conscious Chris)
One Pot Chili Spiced Lentils w/ Rice (recipe by Conscious Chris)
- 1 cup lentils
- 1 cup rice
- 2 cups vegetable broth
- 1/2 white onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 8 oz mushrooms (sweet tooth is our preferred), diced
- 1 tsp chili powder
- 1/8 tsp cayenne pepper
- Salt & pepper to taste
Place all into a rice cooker and cook as you would rice, stirring halfway through.
