This Sweet Raw Green Juice Mojito was actually what I contributed to my family’s Easter celebration this year. They loved it, so I decided I would share it with you all here (this explains my ears in the photo, haha!). For any of you who are interested, I use the Omega VRT350 Juicer. It is a masticating slow juicer, and I love it as it draws out more juice from leafy greens, is a lot quieter than my old centrifugal juicer, and the juice can last up to 3 days sealed in the refrigerator (although it is of course optimal to drink it asap). I have had much success with mine over the last 2 years and highly recommend it 🙂

Use any greens of choice, turning first to what you have on hand! I had lots of spinach in my fridge, so that is what I went for. Also, spinach is one of the mildest greens you can use in juices and smoothies, and since I was serving this to a crowd that I really wanted to please (and who aren’t veggie lovers like me), I thought it was the best choice.

- 5 large granny smith apples
- 3 stalks celery
- 2 large cucumbers, peeled if not organic
- 2-3 cups spinach
- Juice of 3 limes
- Handful fresh mint
- Run all of the ingredients through a juicer.
- Strain juice to remove pulp, if desired.
- Serve over ice or chilled.
