Fall is here, which calls for pumpkin, EVERYTHING.
The first pumpkin recipe of the season for me this year was this simple Pumpkin Pie Soft Serve. Fat-free, guilt-free, and it tastes like, well, FALL.

Pumpkin Pie Soft Serve (fat-free, raw)
- Prep Time: 5 mins
- Total Time: 5 mins
- Yield: 1-2
- 3 medium bananas, frozen
- 3/4 cup pumpkin puree (cooked or raw)*
- 2 medjool dates, pitted
- 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla extract or powder
- Place all of the ingredients into a food processor or high speed blender and run until light and fluffy. If needed, add a couple of tablespoons of water to get it running.
When using raw pumpkin, use “Pie Pumpkins”. They are the only ones I have tried and are delicious.
