Come y bebe is something that my grandma used to make for my brother and I all the time as kids, and it is a dish that my dad always asks me to make because it brings back memories of his childhood in Ecuador. Come y bebe, which literally translates into eat and drink, is an Ecuadorian tropical fruit salad that is made with bananas papaya and orange juice. The fruit are diced up into teeny bite-sized pieces and then covered with orange juice, hence the name.
This is a refreshing dish that can be enjoyed for breakfast, lunch or dinner, as a side dish or even served as dessert. You can even throw in some pineapple and/or mango if you have access to those, as they pair well with these ingredients. You also have the option of adding a sweetener, but I left it out as my fruit was perfectly ripe and I squeezed some fresh sugar-sweet oranges.
The papaya can be cut in advance and the oranges can be juiced in advance as well, but be sure to cut the banana only when you re going to serve it, that way they won’t brown. Also, I suggest refrigerating the mixture for about 30 minutes because it tastes the best when chilled.
- 1 Mexican papaya
- 3 bananas
- 6 cups orange juice
- 2 large oranges, sliced
- Optional: 2 cups Mango and/or pineapple
- If you are making fresh orange juice, I suggest juicing your oranges first. Place the juice into the fridge.
- Dice your fresh papaya and bananas into uniform pieces and place into either 1 large serving bowl or individual serving glasses. Pour orange juice over and chill for 20-30 minutes.
- Serve chilled.
